Biltong Paté

Five minutes, six ingredients, zero cooking. Biltong powder stirred through sour cream, mayo and mustard with a squeeze of lemon and fresh herbs. Serve with crackers and watch it vanish.

Biltong is South Africa's most loved snack and one of the first things every Saffa misses when they leave home. The UAE is one of the few places outside South Africa where you can actually get it, thanks to a handful of SA butchers and specialty shops across Dubai and Abu Dhabi. Biltong paté takes that obsession one step further, turning it into a spread worthy of any drinks table. This recipe is from Ilse van der Merwe's book Easy Al Fresco, and it is exactly the kind of thing you make when you want to remind your non-South African friends what they've been missing their whole lives.

Ingredients

  • 100 g fine biltong powder
  • 250 ml sour cream
  • 60 ml mayonnaise
  • 5 ml wholegrain or Dijon mustard
  • 5 ml finely grated lemon rind
  • 5 ml fresh lemon juice, to taste
  • a handful of fresh chives and/or Italian parsley, finely chopped
  • salt, black pepper and a pinch of ground coriander to season

Method

  1. Add all ingredients to a mixing bowl.
  2. Stir together until thoroughly combined.
  3. Taste and adjust seasoning, lemon juice and salt as needed.
  4. Serve as a spread with crackers, crostini or sliced French bread.

To make your own biltong powder: pulse dry biltong in a blender or food processor until fine. Wet biltong won't work here.
